A mother is the one who fills your heart in the first place. Let's celebrate Mother's Day by making our beloved mother a super moist banana pistachio cake! Banana cake is a very simple recipe that can even be done by people with zero experience in baking. In this recipe, Banana Berangan is being used due to its sweeter banana taste compared to other types of banana. You could always substitute pistachio with other kinds of nuts like walnuts, almonds, peanuts et cetera. On the other hand, brown sugar adds to the moisture of the cake. So if you want the cake to be less moist, simply reduce the amount of brown sugar and replace it with white sugar.

Ingredients
200g of brown sugar
100g of white sugar
227g of salted butter
5 pcs of eggs
1 tablespoon of vanilla essence
240g of all-purpose flour
2 teaspoons of baking soda
25g of crushed pistachio
 
Baking Method
  1. Mash bananas in a bowl, add sugar into the bowl and mix evenly.
  2. Add salted butter cubes into the mixture and stir. Then, add beaten eggs and mix evenly. (Note: It is normal when the butter does not melt evenly and becomes butter lumps.)
  3. Mix vanilla essence, flour, and baking soda in the bowl. Lastly, add in crushed pistachio.
  4. Pour the batter into a butter-brushed loaf pan, and bake in a preheated oven at 177 degrees Celsius for 45 minutes. The batter should produce 2 loaves of super moist banana cake.
