Burdock root is a type of vegetable herb that people normally do not pay attention to. However, it contains high amount of nutrients like quercetin, luteolin, and phenolic acids that act as antioxidants to help fight free radicals in our body that can cause diabetes, cancer, and heart diseases. Burdock root also helps in reducing body heat, and avoiding inflammation and constipation. Therefore, this soup is best consumed when living in tropical countries like Malaysia.

Ingredients
6 pcs of pork ribs
2 pcs of large-sized carrots
1 pc of medium-sized burdock root
1 pc of large-sized sweetcorn
4 slices of Bentong ginger
2 bowls of water
Salt
 
Cooking Method
  1. Blanch pork ribs with boiling water.
  2. Peel and cut carrots and burdock root into small pieces. Cut sweetcorn into 4 small pieces.
  3. In a pot, add all ingredients and bring to boil.
  4. Reduce heat to minimum and continue boiling for 1.5 hours.
  5. Add salt to taste and serve.
