The Rice Cooker Ginger Scallion Chicken Rice is the perfect yet one of the easiest dishes to make for lunch or dinner. When paired with scallions that give a strong aroma to the rice, it is almost impossible to reject another plate of this chicken rice. Ingredients
Rice:
1 teaspoon of finely chopped Bentong ginger
1/2 teaspoon of finely chopped garlic
1 cube of chicken stock
1 cup of rice
2 cups of water
1 pinch of salt
1 pinch of white pepper
3 slices of Bentong ginger
4 pcs of 3-inch spring onion tail
1 tablespoon of chopped spring onion
 
Condiment:
2 teaspoons of oyster sauce
2 teaspoons of soy sauce
1 teaspoon of vinegar
1 teaspoon of sugar
1/2 teaspoon of sesame oil
1 tablespoon of water
1/2 teaspoon of finely chopped Bentong ginger
1 tablespoon of finely chopped red shallot onion
 
Cooking Method
  1. In a rice cooker, add rice and water with a ratio of 1:2.
  2. Add in chopped ginger, chopped garlic, salt, and white pepper then stir.
  3. Add in chicken stock and then cover the rice mixture with chicken drums, spring onion tail, and ginger slices. 
  4. Cook the rice in the rice cooker under cooking mode.
  5. In a bowl, combine oyster sauce, soy sauce, vinegar, sugar, sesame oil and water.
  6. Then, add in chopped ginger and chopped red onion and stir well.
  7. When the rice is cooked, remove the chicken drums then mix the rice and melted chicken stock well in the rice cooker.
  8. Serve the rice with chicken drum and condiment. Garnish with chopped spring onion.
